Kelli,,,,I have used your Mom's recipe for this apple cake many times, but I have never had the problem with the batter being stiff or hard to mix. I put the apples in a bowl, add the eggs, vanilla and oil to the apples, then add
to the dry mixture.
I'll try the different order next time. Do you use granny smith apples?
Oh, and are you using 4 cups of apples?
