Kelli’s Kickin’ Cranberry Holiday Cheese Spread

½ cup Cranberry Sauce   (Homemade is the best…and it’s easy. Just follow directions on side of pkg of cranberries.  Only change I make is I add the juice of one orange to the cranberries.  But you can also use canned whole berry sauce.)

1 pkg cream cheese, softened (8oz)

¼ cup sour cream

2 TBSP Karo light corn syrup (or 2 tbsp honey)

1 TBSP diced fresh jalapeño  (remove seeds)  can add 2 TBSP if you want it spicier!

½  Teaspoon Worcestershire Sauce

1 TBSP Chives (or green onions)

1/4th teaspoon ground cinnamon

 1/4th  teaspoon salt

Mix together cream cheese with all ingredients EXCEPT cranberry sauce.  

When mixture is smooth, spread on serving dish, making a bit of a well in the center of the cream cheese mixture for the cranberry sauce.  You can just pour it on top, but looks prettier this way.  I like to garnish the cranberry sauce with a few chives.

Serve with crackers.  I like Wheat Thins the best…but hubby likes Ritz.

Fried Bologna Corn Muffins

When my guys go hunting, there is always fried "baloney" on the menu.  In fact, I think fried "baloney" sandwiches usually make up at least two meals per day at "deer camp."  This year at the farm I found myself a bit bored on Sunday afternoon while the hunters were out stalking their prey, so I decided to see what I could do with this prized hunting season ingredient.  I took 3 slices of bologna (leaving 3 in the package of course...I certainly did not want to get in trouble when the guys came back in) and diced it, and fried it up in a pan. Remember, we're talking about bologna...not bacon.  I mixed together a corn muffin mix  as the package instructed, and added the fried bologna.  Then I baked the muffins in a muffin pan that had been sprayed with non stick spray.  That's it.  Yes, I actually added fried bologna to cornbread...and guess what?  It was really good. The taste reminded me of a good corndog (which is my guilty state fair pleasure.)   I didn't say it was healthy...but it was pretty tasty!  My sources tell me that deer camp food is not supposed to be incredibly nutritious?  That's what I hear at least... :)  These muffins were great with my Special Crockpot Pinto Beans!  Give this one a try this year for your deer camp.  Yum!
